Enjoy a light and tasty Mediterranean style brunch with a touch of Super Spice Superfood Sprinkles.


  • 1 tbsp olive oil
  • 1 red onion, chopped
  • 2 tbsp Super Spice Superfood Sprinkles
  • 1 garlic clove, sliced
  • Small bunch coriander, stalks and leaves chopped and separated
  • 1 can chopped tomatoes
  • 1 or 2 eggs


  1. Heat the oil in a frying pan with a lid, then soften the onions, Super Spice Superfood Sprinkles, garlic and coriander stalks for 5 mins until wilted. Add the tomatoes  and simmer for 8-10 mins until slightly reduced.
  2. Using the back of a large spoon, make a dip or two in the sauce, then crack an egg into each one. Place the lid on the pan, then cook over a low heat for 6-8 mins, until the eggs are done to your liking. Scatter with the coriander leaves and a shake or two of Super Season Superfood Sprinkles and serve with crusty bread.
